As part of our new healthy eating regime, and due to the fact that I have more time to spare now we’re living in France, I’ve starting making smoothies and health drinks for us! Until now I had been sticking to basic combinations of citrus fruits with a few apples and strawberries thrown in, but this weekend I decided to be a bit more adventurous!
I’ve brought a book with me that I’ve had for a few years and never opened until now, which I think I originally borrowed (well, pinched) from my sister, called ‘Blended Drinks and Health Juices’ so I had a scan through there and found ‘Fennel Fusion’. It’s claimed to good for cleansing the system, so I had a bash at it, and the results were very positive! I had to improvise at points, but here’s the general gist of it:
- 1/2 small red cabbage
- 1/2 fennel bulb
- 2 apples
- 1 tbsp lemon juice
The recipe then calls for the 3 main ingredients to be roughly chopped and popped into a juice extractor, which I duly did.
It was at this point that I realised that I my appliance was a ‘liquidiser’ not a ‘juice extractor’, so I had lots of very finely chopped fennel, red cabbage and apples.
However, I’m not one to be beaten, so my resourcefulness kicked in and I added a couple of cups of water to the mixture, which brought it to a thin paste. Better, but somewhat ‘grainy’, so I introduced my muslin jelly bag to the game and strained the mixture through that!
The result was a beautiful purple liquid, just like in the recipe book!
I poured it over some ice cubes and added the required amount of lemon juice, but after tasting I decided it needed a bit more of a kick, so I doubled the amount!
It ended up being a really beautiful looking, tasty, refreshing drink that was well received on a hot Saturday afternoon, even by my husband, who is sceptical of my concoctions at the best of times!
